Kapsokisio AA ,Kenya Full-bodied with juicy acidity, notes of rhubarb jam, rosehips, and fresh coconut water. Washing Station : Kapsokisio Factory Produced by: Several smallholders farmers Region: Mount Elgon Process: Washed Varieties: mostly K7, SL28, SL34 Altitude: 1,800 - 2,000 masl Roast for: Filter, Modern Espresso This coffee is produced by several hundred smallholder farmers around Kapsokisio, where K7 remains the primary cultivar, alongside smaller plantings of SL28 and SL34. Released in 1936 by Scott Agricultural Laboratories, K7 is still widely grown in Kenya. Recent genetic research places K7 within the Bourbon genetic group, contributing to its balanced structure and sweetness in the cup. Cherries are hand-picked and hand-sorted at the wet mill. Processing begins with an Aagard disc depulper, using water and gravity to separate beans by density. The coffee undergoes dry fermentation for 12–16 hours, followed by washing with clear water. photo credit : tim wendelboe
